Enzymes for Olive Oil
Viscozyme® L and Pectinex® Ultra Olio Blend
Viscozyme® L is Beta-glucanase with side activities including arabanase, cellulase, hemicellulase, and xylanase. Pectinex® Ultra Olio is a combination of many complex pectinases and other side activities. By working synergistically, these two enzymes target different bonds in the olive to release more oil.
Together they also:
• Increase oil yield by as much as 5gal/ton of fruit compared to no enzyme use
• Improve production process with smoother operation of machines and equipment
• Produce faster, more efficient separation of oil and water
• Create a lower residual oil in the pomace
• Maintain quicker, better oil clarification
